Nor can we forget the goodness of Galician fresh cheeses, like the Arzúa-Ulloa, the Tetilla with certificate of origin and its unmistakable conical shape, or the San Simón, faintly smoked and slightly spicy. All of them are handmade with the excellent milk from cows that graze freely on the green slopes. Also noteworthy are the exquisite pastries, and particularly the Filloas, a typical very thin pancake. For us, the most original and lovely local dessert.
